Waubs Harbour Distillery sits on the rocky shoreline of Bicheno, the fishing town off the east coast of Tasmania, two hours south of Launceston. Once an old oyster hatchery, the salt-battered site has been restored and transformed into one of Tasmania’s most talked about up-and-coming whisky distilleries.

It was founded by Tim Polmear, his wife Bec Polmear, and brother Rob Polmear. The latter had been working at both the Lark and Overeem distilleries in senior production roles when one night, around the fire, Tim asked what his ideal set-up and location to make whisky would look like.

Waubs Harbour was named after a Tasmanian Aboriginal woman, Wauba Debar. The Polmears grew up in the area, and with Aboriginal heritage themselves, the family is proud to carry on the Waubs Harbour name in the whiskies they’re producing.

The first Waubs Harbour single malts were released in April 2023, and displayed the rich, oily, saline flavours Rob was striving to capture. If you’re anywhere near this incredible part of Tasmania, distillery tours and guided tastings can be booked by appointment.
