Shyun Ramen Bar is a relaxed eatery and part of the cluster of multicultural restaurants that make up Koornang Road. At night, the 30-seater quickly fills up with students and families that flock to the restaurant due to its affordability.
It delivers warming servings of ramen, alongside other Japanese dishes such as soba noodle bowls and curry dishes. Head to sister venue Shyun just down the road if you’re after something more extensive.
Owner Tom Suzuki (who also owns Tetsujin at Emporium) has a favourite – the chicken tori-gara soup. Made with a chicken broth that simmers for over 10 hours, the opaque soup is rich with natural collagen and vitamins. There’s also a 10-hour pork tonkotsu, chicken karaage ramen and a range of small bites such as gyoza and edamame.
The fit-out itself reflects Japanese simplicity – made up of brick walls, black stools and timber tables. Peek into the open kitchen if you’re curious about how your food is made.
