The distilling company Bill and Lyn Lark founded in 1992 has profoundly shaped the current Australian spirits scene. Most of the Australian whisky distilleries that emerged after the ’90s have been influenced by the Larks. And what started as a hobby whisky-making operation in the Lark home has progressed to the publicly listed Lark Distilling Co, which now owns multiple distilleries across Tasmania and exports Lark whisky to the world.

Tasmania’s pure water, world-class barley and highland peat bogs were what first inspired the Larks, and their full-flavoured single malt whiskies have been consistently recognised internationally for their quality and complexity. Today, there’s a core range of Lark whiskies, which include the stalwart Classic Cask and Cask Strength, and numerous experimental bottlings for those keen on trying something a little different.

At the Lark Distillery in Pontville, 30 minutes north of Hobart, a range of tours and tasting options are available, including whisky and gin blending experiences where you can mix and bottle your very own expression of Lark. The Still bar in central Hobart is also perfectly located for anyone wanting to learn more about the Larks and the remarkable story of Tasmanian whisky.
