Establishment 203
Italian steakhouse Establishment 203 is different from other Brisbane restaurants for two reasons. For one, the kitchen is led by executive chef and TV personality Ben O’Donoghue. But what really sets Establishment 203 apart is the fact it’s owned by Queensland beef producer, Stanbroke, making this a true farm-to-fork experience and a unique proposition for steak lovers.
To that end, expect around 11 cuts of steak on offer, all fired over a Mibrasa parrilla grill imported from Spain. This being an Italian restaurant, you can also expect to find handmade-pastas (Wagyu-sirloin bolognaise with tonnarelli, spaghetti vongole) and mains such as quail saltimbocca with grilled radicchio.
The wine list also steers towards Italy, but there are plenty of Australian drops in the mix. Cocktails are mainly classic, besides those with a more modern twist – like the Pink Americano, Truffle Negroni and Caprese Martini.
Interior designer Tamsin Johnson (Raes on Wategos, Sir the Label) consulted on the fit-out. With patterned floors, luxe strawberry booth seating and bright flower arrangements, the space doesn’t shy away from colour – but the real highlight is the impressive open kitchen.
