A “refined evolution” of Catalan wine bar La Salut (RIP) is coming to a basement CBD space. Underneath Palazzo Salato, to be exact. The Love Tilly Group (Ragazzi, Fabbrica, Dear Sainte Eloise, Love, Tilly Devine) is currently in build mode, chipping away at a moody room that’ll be a late-night Spanish wine bar (hopefully) by Christmas.
“Nothing’ll be repeated, but you’ll know it’s our food,” the group’s exec chef Scott McComas-Williams tells us when asked if it’s La Salut round two. We’re sad a replica of the devilled eggs isn’t on its way, but maybe there’ll be a fancier version?
“I’m super excited. It’ll be back to my Spanish roots … tapas and small plates – a fun little snacky vibe,” the chef says. McComas-Williams brings kitchen hours from La Salut (the Catalan city) as well as our own Movida, plus a love of the Spanish way of eating. Menu details are incoming.

SIGN UPAlex Major – exec chef at Palazzo Salato, the group’s Italian diner upstairs – will oversee Letra too. La Salut’s head chef Brandon Jones has stuck around as well. “I’ve worked with both of them for years, so it’s a very good team. I’m very confident in that team.”
The wine list will push 50 bottles, all poured by the glass. The drops will come from all over: Lebanon, Australia, Greece, the US. Sarah Watts, of Studio Vista, is driving a casual fit-out, set to be a big mood in candlelight. Especially on late summery nights.
There’s no open date is yet, but the team hopes you’ll be able to descend by Christmas.
Letra House is expected to open at 436 Kent Street, CBD, by the end of 2024.
